I am not vegetarian or vegan (although I was vegan for 7 years!), but some days happen to turn out that way, like this one. I really appreciate the simplicity and ease of vegan/vegetarian meals every so often. I didn’t even realize this day was entirely vegan until I sat down to write this post which is the beauty of eating in accordance with your cravings and what your body wants. No two days are the same and your body’s needs fluctuate all the time. Here is what I was craving and enjoying on this day….Breakfast – Grapefruit drizzled with coconut oil and cinnamon and a handful of raw almonds + Suja Twelve Essentials (unpictured)
Lunch – Flax crackers with an avocado, tomato, and micro greens
Dinner – Zucchini noodles with truffle oil, smoked sea salt, and garlic + dairy free “creamy” caesar salad made with tahini and miso
Dessert – shredded coconut with coconut oil and stevia
