Hiiiiiiii guys!!! I hope you had a fab New Year! Sorry for the post delay on this trip recap, but I took SO many photos and it took me some time to go through them all! So….Thailand. We went to Koh Samui which is a gorgeous island with lush greenery, coconut groves, and gorgeous beaches. I don’t know how to accurately convey how much I adore this place. The people are amazing, the food is amazing, the vibe is amazing, the natural beauty is amazing…you get the gist? I absolutely love Bali, and Thailand is very similar in terms of weather (warm and humid!), people (so sweet, eager to help), food (fresh fish all day), and accomodations (villas are very much the same design style – sleek, modern, zen, sophisticated). It was the perfect spot for a relaxing beach holiday and the minute I got there I actually chilled out and wasn’t so “attached” to stuff going on in my life. It all melted away and I was totally present which isn’t the easiest thing for me to do and it felt so good. Before we got to Koh Samui, we decided to break up the long travel journey and stay the night in Hong Kong with a half day on each end so we could do some fun stuff. I am SO glad we did because HK was so festive and fun this time of year! There were excessive holiday decorations EVERYWHERE – like over the top – and I loved it! The shopping was unreal – the Louis Vuitton was 4 stories and there was a line out the door and wrapped around the street to get in Chanel because they limit the number of people that can be inside at one time. If my boyfriend hadn’t talked me out of it, you know I would’ve been in that line like an eager child waiting to meet Santa. We spent tons of time walking around the city and soaking it all in. We also had the most memorable meal at Sevva and I had hands down the best salmon of my life. Yes, for real. Since, I have so many pics, I’ll let them do the talking….enjoy!

Ahhh!!! There it is! The best salmon of my life. Can you guess what that thick black layer is on top? Ok, I’ll tell you. It’s truffles! It was the most decadent, delicious thing ever. It was basically just truffles and garlic chopped up finely, mixed with olive oil and sea salt, and spread right on top. I. Died. And I think I’m still dead.

I have to tell you about Barracuda. It’s this awesome restaurant owned by a German ex-pat who wanted to live an island life and moved to Thailand. They have tons of great salads, unique and delish fish preparations, meats, soups, and desserts. My girlfriend Kayleigh recommended it so we went for a casual fun dinner and were totally blown away by how yummy the food was and how cool and fun the atmosphere was! It was packed and everything on the menu was perfection. We ended up cancelling our Christmas Eve reservations elsewhere and went back again for dinner that night because we wanted to try more things on the menu. The owner was there both times and was super fun and chatty about his life, the restaurant, and his food. Above is a sesame crusted ahi tuna salad with the best lime dressing ev and salmon carpaccio with a super flavorful marinade, and below is salmon with veggies and salmon with eggplant. Clearly I don’t like salmon at all and clearly I’m extremely adventurous.
